Vegetarian Shephard's Pie 
Here is a good recipe for Vegetarian Shephard's Pie.  With all of my posts, I'm going to cook along with you just like in "Julie and Julia".  But since I am The Frugal Vegetarian I'm going to give you the price for everything as well.  I'm going to need feedback on this one though.  A lot of the food I'm going to get is from Trader Joe's.  If you don't have one near you and feel I need to go to a regular grocery store just let me know.  And a lot of the ingredients for all recipes will have seasonings that should be in your cabinet so I won't list those prices.  I will only list them if the recipe ask for fresh herbs. 
  • 1/2 pound lentils, cooked and drained (Steamed Lentil's from Trader Joe's $2.99)
  • 1 onion, diced ($1.69)
  • 1/2 tsp crumbled fresh sage (organic $1.79)
  • 1/2 tsp minced garlic (organic $1.69)
  • pinch of dried oregano
  • 1 tsp salt
  • dash cayenne pepper
  • 3 large potatoes, cooked ($1.17)
  • 1/2 to 1 cup of hot soy milk ($1.99)
  • Optional meat substitute (Morning star crumbles $2.80)
Pre-heat the oven to 400 degrees.
In a large mixing bowl, mash the cooked lentils thoroughly and add the onion and seasonings (and optional meat substitute). Put the lentil mixture in a lightly oiled casserole dish.
In a separate bowl, mash the potatoes and add the hot soy milk, and salt. Beat by hand or with an electric mixer until fluffy.
Spread the mashed potatoes on top of the mashed lentils (and optional meat substitute) and bake for 20 minutes or until the potatoes are dry on top.
Place the pie under the broiler to brown on top. Serve warm.
